Grading of steps

Does the tilt of the grade coincide with how you stepped? Like if you step early, will the "great" that pops up on screen tilt to one side a certain way?

Not exactly. If you get an Excellent, Great, Decent, or Way Off, there will be a minus sign before the rating if you stepped early, and a minus sign after the rating if you stepped late. However, this was added in for ITG2; as such, ITG1 and Stepmania don't have this feature.

I think the grade tilts left for the first arrow then right then left etc. Or at least that's what it does with misses...

As for how to really tell if you are early or late...yeah what he said.
