Well, from what I've experienced, there's multiple kinds of cramps...
Causes:
Dehydration
Over-hydration
Over-eating
Under-eating (occasionally, usually more-so results in shakey muscles)
Also, sometimes from not streching

That's only in my experience, perhaps others have different kinds to add to this.

EDIT: Yeah, by over-hydration, I meant drinking too much right before you play, which gives you that bloated feeling...yeah...

You should by hydrating yourself the day before. Drink a few glasses of water the night before you play. Not all at once though. Bananas help level your potassium amounts. Eat a banana the night before or a few hours before you play. Also, lay off of the protein for a few hours before you play because it takes so long to be digested. You should be eating carbs, stuff like pasta, potatoes (not french fries, real potatoes), breads, etc the day you play. The more hydrated you are, and the more room you have in your stomach, the better off you'll be in avoiding cramps.

P.S. I learned this through running cross country, I don't take dancing games this seriously, but if you're having problems this should help.

EDIT: In response to the over-hydration problem, you can't be overhydrated. Being hydrated is having the water in your blood. Any excess water in your blood will be taken out by your kidneys. I think you mean just drinking too much right before you play. That can be a problem. Drink water or Propel while playing. No gatorade or sodas.

Look up "hyponatremia" or "water intoxication". Too much water can actually cause your brain to swell and push against your skull, causing awful headaches and even death. This is most often seen in marathon runners, who may drink gallons of water during a race, faster than they can process it. It's not really the excess of water that does the damage, but the drop in electrolyte levels. Sodium is lost through perspiration, and large floods of water dilute the remaining sodium even further. Quite a few athletes have died this way.
