I was thinking of making my own metal pad using this design, but I was wondering if it's at all possible to take the board from an old dance mat and incorporate it to the design. It makes mention that it's possible on the site, and I would rather skip the disassembling a PS2 controller saudering stuff. If anyone has any info or links on how to do this it would be apperciated.

i'll admit i have absolutely no idea when it comes to assembly, but if i were you, i'd think about the sensor like and responsiveness, you know as well as i do that soft mats are not your best friend to play on, just thought you should keep that in mind.

Ah, ok. I wanted to use the sensors, but if it won't work I won't waste my time. Basically I was wondering if it was possible to just strip away the outside covering of the pad and build a metal pad around it.

Nope, the sensors are way too weak and wont hold up over time. Id tell you that if you dont want to gut a perfectly good PS 2controller to use this guide for the PCB:
