I've seen the idea floating around out there, and I was wondering if it was at all possible to strip the connector on my XBox controller to make it USB compatible (without the use of an adapter). Is this... doable?

Yeah it will but you will have to mess around with the driver software as the ID hex value of the dancepad will be different to the normal xbox pads... though they may have changed it now... check on the XBCD (Xbox controller driver) website (google it).

There's a thread for this in the Sims forum, since that's where USB adapters would be needed. Look there.
